For anyone interested in further detail of potato traffic, and indeed freight logistics, especially during the war, I recommend a couple of books (probably available second-hand on abebooks.co.uk). By rail to victory, The Story of the LNER in wartime and a delightful Oakwood press book, The Lincolnshire Potato railways by S.E. Squires.
The former is full of staggering statistics of food, building materials, and personnel movements during and after WW2. The shear logistics of creating and manning over 100 East Anglian airfields is incredible.
The latter documents the rise and fall of the narrow gauge systems transporting potatoes to assorted railheads at Nocton, Isle of Axholme, Deeping St.Nicholas, Holbeach and more...fascinating.
