Excluding the county of London, which county had the benefit of both Great Western Railway and Great Eastern Railway stations?

Excellent answer.
However, parts of Middlesex were subsumed into the County of London in the latter part of the 19th century. The answer I was looking for was Northamptonshire.
Stations: Aynho (GW) Peterborough (GE). At that time Peterborough (East) station lay within the Soke of Peterborough, part of Northamptonshire.
The city of Peterborough subsequently became part of Huntingdonshire and latterly Cambridgeshire.
