Coach kits

How feasible - or otherwise - is it to use Hornby or Bachmann coaches, replacing the sides with Comet sides or to use combinations of Hornby, Bachmann, Comet and Kirk - say, for Thompsons and Gresleys?

That depends how good you are at painting. The actual overlaying of the RTR coach with a brass side is easy enough. Note though that the beading on Comet Gresleys is massivly over scale. There is probably no advantage of using Kirk sides in this way over building the complete kit.
