How feasible - or otherwise - is it to use Hornby or Bachmann coaches, replacing the sides with Comet sides or to use combinations of Hornby, Bachmann, Comet and Kirk - say, for Thompsons and Gresleys?

That depends how good you are at painting. The actual overlaying of the RTR coach with a brass side is easy enough. Note though that the beading on Comet Gresleys is massivly over scale.
